Marco has been cooking professionally for more than 16 years and has a wealth of experience in the world of catering. During his career, he has worked in different types of kitchens in 3 different countries: Italy, Germany, and the United Kingdom. Born in Palermo, Italy, Marco moved to Germany aged 19 after finishing his Catering Studies, where he worked as a Commis Chef. A desire to further his career brought him to Edinburgh where he became Sous Chef at Est Est Est at the age of 23, managing a brigade of 10 chefs. After 4 years, he then started to work for Café Marlayne, where he perfected his skills and gained experience in French cuisine and baking.
